So tender and delicious when cooked indoors using a cast iron skillet and your oven, or outdoors on your grill!
Ingredients
1 Pork Tenderloin
1 cup Saucier Sesame Ginger Sauce, defrosted
2 t neutral oil
Optional: Sliced scallions (green onions) for garnish
Preheat oven to 400°.
Trim off any silver membrane from tenderloin with a very sharp knife.
Place 1 cup Saucier Sesame Ginger Sauce in a 1 gallon ziploc bag, add pork to bag and turn to coat. Place on counter for 45 min. turning occasionally, to bring to room temperature before cooking.
Remove pork from bag and place on a plate with several paper towels. Pat dry.
Rub oil all over the pork.
Pour the marinade into a small saucepan. Bring to a boil, turn off heat.
Heat an oven-proof cast iron skillet on high heat until scorching hot.
Place pork into skillet and allow to sear on high heat to dark brown on all sides, takes about 5 minutes. Turn off skillet.
Spoon half of the boiled sauce over pork turning to coat.
Bake at 400° for about 10 minutes, or until internal temperature is 135-140°. Remove from oven. Cover and allow meat to rest for 10 minutes. (Internal temperature will rise to ~150° giving you a juicy, slightly pink interior.)
To serve, slice and drizzle remaining sauce over meat, top with sliced scallions. Delicious with a side of rice and stir fried vegetables.
