Saucier Spicy Black Beans and Smoked Sausage with Rice

Quick and comforting lunch or dinner in a bowl, with a spicy kick!

Serves 4

Ingredients:

1 – 16oz container of Saucier Black Bean Soup

1/4 cup chopped onion

½ cup chopped green pepper

1 clove of garlic, chopped

1 cup diced smoked sausage, such as kielbasa

1 – 14.5 oz can of diced tomatoes, drained

1 t chili powder

1 ½ cups precooked rice

Optional: chopped cilantro, lime wedges, sour cream 

    In a large saucepan, heat 2 T neutral oil over medium heat.  Add onion and green pepper cook and stir for 10 minutes.  Add garlic and sausage, cook and stir for 5 minutes.  Add tomatoes, chili powder and Saucier Black Bean soup.  Bring up to a simmer, and cook uncovered for 10 minutes.

    Place a large spoonful of rice into 4 large soup bowls. Spoon black bean and sausage mixture over the rice.  Top with chopped cilantro, squeeze of lime and/or a dollop of sour cream, if desired.
